Our tbone has been dry aged in our fancy little Himalayan salt brick dry ageing room for around 4 weeks, increasing its tenderness and flavour. It’s one of Tom’s parents’ favourite cuts. We recommend 1 per person, or 2 per 3 not-so-hungry people.
